Turkey Tetrazzini

This classic casserole is so easy to make and works well with either leftover turkey or fresh turkey cutlets. You can also substitute flavored bread crumbs for the plain ones and jarred, roasted red pepper for the fresh variety or use whatever vegetable you prefer.

 

• 12 Servings

• Prep: 30 min. Bake: 30 min.

• Ingredients

  • 1 package (16 ounces) spaghetti
  • 2 medium onions, chopped
  • 9 tablespoons butter, divided
  • 1 pound sliced fresh mushrooms
  • 1 large sweet red pepper, chopped
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 6 cups 2% milk
  • 1 tablespoon chicken bouillon granules
  • 6 cups cubed cooked turkey breast
  • 1 cup grated Parmesan cheese
  • 1-1/2 cups dry bread crumbs
  • 4 teaspoons minced fresh parsley

  Directions

  • Cook spaghetti according to package directions. Meanwhile, in a Dutch oven, saute onions in 6 tablespoons butter until tender. Add mushrooms and red pepper; saute 4-5 minutes longer or until vegetables are tender..
  • Stir in flour and salt until blended. Gradually whisk in milk and bouillon. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in turkey and cheese; heat through. Remove from the heat.
  • Drain spaghetti; add to turkey mixture and mix well. Transfer to one greased 13-in. x 9-in. baking dish and one greased 11-in. x 7-in. baking dish.
  • Melt remaining butter; toss with bread crumbs. Sprinkle over casseroles. Bake, uncovered, at 350° for 30-35 minutes or until heated through. Sprinkle with parsley. 

Everday Living 43

Today this Thanksgiving Day I reflect on my blog Everyday Living 43.  My hope within my years on earth is that I am able to make each day count. 15 years ago this past October we laid my Dad to rest. He fought a vigorous battle with cancer and did not win. My life forever had been changed. I was 14 at the time, 9th grade in middle school-a whole world ahead of me but not much zest left for life.

As days, weeks, holidays, confirmation, prom, high school graduation went by I soon realized how to live my life without him. It was hard at first than it became the new norm-life without my dad was a reality and even though it was so frustrating to not have him by my side to walk me down the isle-I had to change my way of thinking and anger and learn to celebrate his life.

My dad had 43 years on this earth-43 years that he lived everyday to the fullest-presented it with a zest of life-brought so much laughter, smiles and warmth to all the lives he touched. He had a way with people, his positive outlook on life is what gave him the energy and strength to make those 43 years count.

So it is with great admiration, gratitude and love that I honor my dad-his 43 years of life and my 14 years I had with him that I make each and everyday count.

I love you Dad, I miss you and this Thanksgiving I am thankful for those 14 years I did have with you-you have taught me how to love, laugh and cry and this day within all the hustle and bustle of life I will make this Thanksgiving Day count.

Pretzels with Pizzazz

3/4 Cup Vegetable Oil

1 Pkg Ranch

1 tsp. Garlic Salt

1 tsp. Cayenne Pepper-use 1/2 tsp for less spice

1 20oz Package of Preztels

(I use the Menards butter spindle Preztels 32oz size)

Mix all the spices together and place in a large bag or tupperware
with pretzels and coat evenly. Place onto baking sheets and bake at

200 degrees stirring every 20 minutes. Cook them for about 1 hr 30 minutes.
Cool and store in a air tight container

-I place them back in the menards pretzel container and it keeps
them fresh for weeks!

Warning!-you should not leave anyone alone with these pretzels
-they will disappear:-)

Party Pleaser-Pull Apart Bread

Need a great Party Pleaser for your Thanksgiving Dinner-Try this must have easy Bread Recipe-Sure to Impress!

Pull-Apart Bread Rolls
Prep Time: 15 Minutes Refrigerate overnight Servings: One 10-inch loaf  **Easily Serves 20-25 people
Ingredients  1 tablespoon Morton® Nature's Seasons® Seasoning Blend 1 tablespoon dried oregano, crushed 1 tablespoon dried basil or parsley, crushed One 3-pound bag frozen white roll dough (36 rolls) 1/4 cup melted butter 1/4 cup grated Parmesan cheese
Directions Thoroughly combine Morton® Nature's Seasons® seasoning blend with herbs. Arrange 10 to 12 frozen rolls in bottom of greased 10 X 4 inch tube pan. (AKA bundt pan) Brush rolls with butter, sprinkle with 1/3 of Nature's Seasons/herb blend, then cheese. Repeat layers of rolls, butter, herb blend and cheese an additional two times. Use complete package of rolls. Cover with greased plastic wrap; refrigerate overnight. Remove from refrigerator; allow to rise until doubled in size about 45 to 60 minutes. Bake at 375°F for 15 minutes. Cover top loosely with aluminum foil and continue baking 20 minutes or until golden brown. Cool 5 minutes; invert onto rack. Let stand 1 minute and gently remove pan from loaf. (If pan has removable sides, release sides first, then invert pan to remove loaf.) ***Have the recipe available-your family will be requesting copies:)

Cheesy Hashbrowns



1 Bag frozen hash browns

2 Cups Shredded Cheddar Cheese
1 can cream of chicken soup
1 16 oz container sour cream
2 tbsp melted butter
crushed cornflakes
minced onion, optional

Preheat oven to 350. In a bowl, mix together the Shedded Cheese, soup, and sour cream till smooth. Place hashbrowns in glass 9x13 baking dish that has been sprayed with cooking spray.
Pour the cheese mixture over hashbrowns. Melt the 2 tbsp butter and mix with some crushed cornflakes.
Put cornflakes over the top of the cheese mixture and bake, covered, for 45 min. Uncover and bake an additonal 15-20 min, or until bubbling and golden brown.

These are a Family Favorite-great as a side dish or breakfast item-Enjoy!
