Southwest Beef Stew
I just received this recipe from my sister-in-law Teresa today
and I have it brewing in the crockpot as I type...

This Southwest Recipe calls for:
1 lb. Lean Ground Beef
1 Medium Onion Chopped
1 can (28oz) of Diced Tomatoes, undrained
1 can of corn or 1 pkg of frozen corn
1 can of black beans, rinsed and drained
1 cup of picante sauce
3/4 cup of water
1 tsp. ground cumin
3/4 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. pepper
brown the hamburger-drain, combine all the ingredients together in a crockpot on low for 4 hours
my sister-in-law served the stew with some cheese quesadillas-what a great dinner!
Suggestions to this great meal idea:
First off, I had leftover chili so I used that as my base-so my stew will also have some chili beans in it too
A lot of Stew recipes call for cubed meat-chuck roast or arm roast-whatever you have available or is on sale will work just fine
I also used clamato instead of adding water for some extra added flavor
Instead of using garlic powder I used minced garlic
I added more cumin than the 1 tsp. it called for-probably about 2 teaspoons is what I ended up putting in
I think I may throw in some patatoes and carrots-I saw a lot of varieties of this recipe online and you really can't go wrong with meat and patatoes-right?!*** if you choose to add in these items make sure either increase the time or increase the temperature to ensure the carrots and patatoes are soft and ready to eat at dinner time
I think I may make up a batch of beer bread and serve with our stew tonight in place of quesadillas

Looks good! Will go on my menu for next week. At my house it will be served alone, maybe with cheese, sour cream and chips to garnish. We keep it simple!
