Got Rhubarb?! Yummy Rhubarb Custard Cake Recipe

If you have an abundance of rhubarb or know someone who does this dessert is a must to make!

Rhubarb Custard Cake Dessert

Ingredients:
1 Yellow Cake Mix-without pudding (with pudding is more moist)
4 Cups fresh rhubarb chopped into 1/4" size
1 Cup Granulateed Sugar
2 Cups of Whipping Cream

Directions:
Mix Yellow Cake Mix according to packaging and place in a greased 9X13 pan
Place 4 cups chopped rhubarb on top of yellow cake mix

Sprinkle 1 cup of sugar over the rhubarb

Add 2 cups of whipping cream over the sugar

Bake uncovered at 350 degrees for 1 hr 25 mins
insert a toothpick to make sure the center of the cake is done

somehow during the baking process the cream goes to the bottom of the cake
-creates a yummy moist custard and the cake rises to the top
allow the cake to cool- serve and/or store in the refrigerator if you have any left :)

Serves: 8-12

***Top with Ice Cream, Cool Whip or eat plain
